Two breakfast recipes: which takes your fancy?

Breakfast Gratin

A tasty twist on the Full English…


  • 1 tbsp olive oil
  • 175g flat mushrooms, sliced
  • 4 rashers streaky bacon, sliced
  • 1 small onion, roughly chopped
  • 4 small cooked potatoes, cubed
  • 4 small tomatoes, halved
  • 4 medium eggs
  • 125g cheddar cheese, grated
  • salt and freshly ground black pepper
  • chives to garnish


  1. Heat ½ the oil in a large frying pan, add the mushrooms, bacon and onion and fry for about 5 minutes until golden. Romove with a slotted spoon and set aside.
  2. Add the remaining oil and fry the potatoes for 5-6 minutes until golden.
  3. Increase the heat, stir in the tomatoes and fry for 2-3 minutes. Return the mushroom mixture to the pan and season to taste.
  4. Make 4 holes in the mixture and carefully break an egg into each hole. Scatter over the cheese and place under a preheated hot grill for 4–5 minutes or until the eggs are set and the cheese is bubbling and golden.
  5. Sprinkle over the chives and serve.

Pear, Banana, Oat and Honey Breakfast Smoothie

Quick, easy and healthy…


  • 1 ripe juicy pear, cored
  • 1 ripe banana, peeled
  • 30g porridge oats
  • 1 tbsp clear honey
  • 110g low fat natural yoghurt
  • 25 ml apple juice
  • Handful of ice cubes


  1. Place all the ingredients in a smoothie maker or food processor and blend till smooth.
  2. Serve chilled in a tall glass.

    Both sound great! 🙂 I couldn’t possibly choose! Although controversial reference to the “Full English” -with the use of potatoes and no beans its closer to a twist of the “Full Irish” 🙂
